The Humble Carrot with Ora Aselton

I’m not naming names, but… there is an in-law in our extended family who BOILS EVERYTHING! Yup… boiled potatoes, boiled broccoli, boiled carrots, boiled beans, and on and on. Don’t get me wrong, there’s nothing objectionable about the occasional boil. But the poor woman and those gathered at her table are missing so much variety and flavor!
At this Harvest Table workshop, we’ll take the Humble Carrot to loftier heights: A morning muffin bursting with carrots and other nutritious goodies, a carrot casserole that starts with boiled carrots but winds up in delectable layers, almost like a carrot lasagna, and finally, roasted carrots with spices that will knock your socks off! While time will not allow for baking and icing a carrot cake, as a bonus, I’ll share a family recipe for the best one I have ever tasted!
